This berry bar recipe is one of my favorites and I think they are one of the best desserts of all time!  I enjoy sweets as much as the next girl and one of my favorite desserts (that I actually eat for breakfast, too – they are sooooo good with coffee) are these delicious berry bars. My friend made them for me a few years ago and I loved them and just HAD to have the berry bar recipe! You need only a few ingredients, and it takes virtually no effort to prepare the berry bars. Mix a few ingredients together and put them in the oven and approximately twenty-five minutes later, out come the most delicious berry treats ever! Here is how you make the berry bars:

Berry Bar Recipe Ingredients:

  • 1 box of blueberry muffin mix with real blueberries (I buy the Krusteaz brand at Kroger that actually comes with a little can of blueberries inside the box. I do not use the fat-free version but I suppose you could if you wanted to).
  • 1 cup of oats
  • 1/4 cup packed brown sugar
  • 1/4 cup and 2 tablespoons butter
  • 1/2 cup of strawberry preserves (or raspberry, whichever you prefer) – I usually use just a little bit more than it calls for; that’s just my personal preference

Directions:
Preheat the oven to 375 degrees. Grease an 8-inch baking dish. Combine the dry muffin mix, oats, and brown sugar in a bowl. Cut in the butter. Blend with a spoon. Reserve 1 1/2 cups of the mixture. Press the remaining mixture into the baking dish. Fold the blueberries into the preserves and spread onto the crumb mixture. Sprinkle with reserved mixture. Bake about 25 minutes.

I love the way the strawberries and blueberries taste with the crumb mixture topping. It is amazing! I usually heat up the berry bars up when I eat it for breakfast. Hope that you love this berry bar recipe, too!
