Our family is always on the hunt for a healthy vegetable to serve as a side dish, and this roasted asparagus recipe is a winner. We created this delicious asparagus that turned out to be quite the hit. It will be a staple in our home from hear on out for sure.

To me this side seems like something you would find on the menu of a fancy cafe or restaurant. Use the recipe to spice up a plain chicken dinner or as the side to a home grilled steak or burger. Pair it with a garlic mashed potato maybe or some red lentils even. I find that it is crunchy, rich and delicious, and can take the place of a starchy side if you are trying to watch your calorie intake! I love the way the cooked parmesan cheese tastes. It’s really healthy, too.

“Gourmet” Roasted Asparagus Recipe

  • 1lb asparagus spears, tough ends trimmed
  • 1-2 tbsp Olive oil
  • Salt and pepper to taste
  • 1/4 – 1/2 cup Parmesan cheese

Spread the asparagus in 1 layer on a baking sheet. Cover liberally with olive oil. (A cooking spray can be substituted.) Generously sprinkle salt and pepper.

Roast asparagus in a 400 degree oven for approximately 15 minutes. After 15 minutes, slide the baking sheet out. Sprinkle Parmesan cheese over the bottom 1/2 of the asparagus spears. Roast for 5 more minutes.

Sometimes making vegetables take good can be a challenge. We get tired of the same old side dishes, so it’s always fun when we find something new that we love to add to the rotation, especially when it’s easy and still healthy. Hope you enjoy this roasted asparagus recipe!
