Yummy Asparagus Recipe

To me this side seems like something you would find on the menu of a fancy cafe. Use it to spice up a plain chicken dinner. I find that it is crunchy and rich, and can take the place of a starchy side if you are trying to watch your diet!
 
"Gourmet" Roasted Asparagus

1lb asparagus spears, tough ends trimmed
Olive oil cooking spray
Salt and pepper
1/4 - 1/2 cup Parmesan cheese

Spread asparagus in 1 layer on a baking sheet. Spray liberally with cooking spray. Generously salt and pepper.

Roast asparagus in a 400 degree oven for approximately 15 minutes. After 15 minutes, slide the baking sheet out. Sprinkle parmesan cheese over the bottom 1/2 of the asparagus spears. Roast for 5 more minutes.
